Keto & Vegan 2 Minute Oatmeal

This oatmeal is incredibly easy to make, and tastes almost like the real thing! If you want to make this as overnight oats – just mix everything in a jar, stir together, refrigerate, and microwave for 2 minutes right before you are going to eat it. I also like to add a pinch of salt, but I didn’t include that in the original recipe, in case people don’t like the mild salty flavor.
R E C I P E
1 cup nut milk or water
1/4 cup hemp seeds
1/4 cup ground flaxseeds
1 tbsp coconut flour
1 tbsp chia seeds
2 tbsp coconut oil, melted
1/4 tsp vanilla extract
1 tbsp monkfruit, or favorite sweetener

Mix all ingredients together and microwave for 2 minutes. Top with your favorite toppings.
