* 2lb ground beef
* 6 green bell peppers
* 1 large yellow onion, chopped
* 2 cups zucchini, grated
* 4 cloves garlic, minced
* 2 cups crushed tomatoes
* 2 cups Monterey Jack cheese, shredded
* 1 tbsp oregano
* 1 tsp crushed red pepper flakes
* 2 tbsp olive oil
* green onions, optional
* salt & pepper, to taste
* cooking spray


Preheat oven to 350ºF. Prepare your filling. Heat olive oil in a pan over medium high heat. Brown your ground beef. Add your zucchini, onion, and garlic and sauté for 4-5 minutes until vegetables are soft. Season with oregano, crushed peppers, salt and pepper. Taste and adjust if needed. Add the crushed tomatoes and simmer for 10-15 minutes. Set aside.

Prepare the bell peppers. Slice off the tops of the peppers and remove the seeds and veins. Season the inside of the peppers with salt and pepper. Spray your baking dish with cooking spray and place the bell peppers in the dish.

Begin filling each pepper with your beef mix until mix is evenly distributed. Take 3/4 cup of water and pour it into the bottom of the baking dish. This will prevent your peppers from burning and allow them to steam. Cover the baking dish with aluminum foil and bake in oven for 45 minutes.

Remove peppers from oven and top with the shredded cheese. Place back in oven for additional 5 minutes until cheese is melted. Remove from oven and garnish with chopped green onions.
