I love this soup and the whole family also loves it! It’s just perfect for fall! Keto Broccoli Cheddar Bacon & chicken Soup. I love having leftovers of this soup and eating for lunch! You can thicken this with Xanthan Gum for a thicker soup or leave it thin and just ENJOY!

Broccoli Cheddar Bacon & Chicken Soup

We used 1 rotissierre chicken or about 2 cups of cooked chopped chicken

We also used about 10 pieces of cooked bacon, chopped

In a pot add about 3 tbs olive oil
Add your chopped onion and about 1 tbs minced garlic
Add about 1-2 tsp celery seed or chopped celery would be even better.
Saute this until cooked and flavors mixed

Add 2 containers of chicken broth. I used Swansons 32 oz.

Add 2 bags of frozen Broccoli

Add the following seasonings or any that you like:

2 bay leaves (remove before serving)
1/4 tsp thyme
1/2 tsp onion powder
1/2 tsp marjoram
1/2 tsp basil leaves
1/2 tsp onion powder
1/2 tsp white pepper
add pink himilayan salt & pepper to taste

Bring to a simmer
Add about 2 cups of Heavy Cream
Bring to simmer, then reduce heat to low

***Note: Be sure to reduce heat to low before adding cheese.
Slowly add about 3 cups of grated cheddar cheese while stirring.
Note: The pre shredded cheese from the store usually works well because it
does have a little corn starch added to prevent clumping. Use what works best
for you.

Note: If you want a thicker soup add about 1 tsp Xanthan Gum sprinkled in
while stirring and it will thicken nicely.

Stir till all cheese is melted and you are ready to serve and ENJOY

Garnish with a little more cheese, green onions, bacon and a dollop of sour
cream if you like! ENJOY!
